Do you have quick dinner solutions? I'd love to know your dinner ideas for quick and easy recipes. My life as a working mom is rewarding but it can take on toll on me time wise. I LOVE my family, I am good at my job, and I am trying to make it all work. Sure I'd love to have more time to myself to workout, get a massage, and maybe finally get my hair done. I'd settle for getting the laundry put away, stocking the pantry, and cleaning out the junk drawer. I juggle pretty well but being mommy to a 3 year old, a full time employee, and a cheerful wife while being in my forties isn't always easy for me! I know that some women may be able to do it all without batting an eye. THAT isn't me. Not yet. Maybe not ever. I am not going to beat myself up over it. I'm doing the best that I can. When pressed for time we can still enjoy a tasty meal. Tonight's Dinner: Lemon Pepper Tilapia.
When lacking time for dinner prep even the busiest of moms can rely on quick dinner solutions. My newest discovery: Land O’Lakes Sauté Express® Sauté Starter. Sauté Express® Sauté Starter is a seasoned butter and olive oil square with a variety of herbs and spices added in. It’s all in the square, perfectly blended.
There are 5 different flavors:
Garlic & Herb
Italian Herb
Savory Butter & Olive Oil
Lemon Pepper
Teriyaki
You can find Sauté Express® Sauté Starter in the in the refrigerated dairy section at Walmart. I was a bummed that I could only find 2 of the 5 flavors on my last visit. I purchased the Garlic & Herb and Lemon Pepper. I am hoping to try the Savory Butter & Olive Oil as well as the Teriyaki next time.
I love the convenience in the easy-to-use, pre-measured portions. Dinner prep is simple and the food is tasty. I had some Tilapia fillets in the freezer so decided to pair it with the Lemon Pepper. We enjoyed the splash of lemon and hint of black pepper. We had leftover whole grain pasta with kale from last night that was the perfect accompaniment.
You can try out Land O' Lakes Saute Express Recipes or create your own. For our meal we followed the package directions. You can add the protein of your choice.
Lemon Pepper Tilapia
To make 2 servings: 1 Sauté Express® square + 1/2 lb fish. For best results use a non-stick skillet. We like to use ceramic cookware.
1. Melt Sauté Express® square(s) over medium-low heat until bubbling and pan is coated.
2. Add fish. Adjust heat if necessary to prevent burning.
3. Sauté until thoroughly cooked.

Yum! This looks really good. I love Tilapia and I hadn't heard about Saute Express yet. I may be making a trip to the grocery store today.
